Kodiak Miracle Muffins ~ a simple, but delicious recipe

Well, my day didn’t go as planned…I didn’t get pictures of Nora taken, and I ran into a snag with my “something wonderful” project in my sewing room.

So I thought a new recipe was in order…I’ve made these twice in the last two weeks and I really like them!!
I found the recipe on Pinterest…

They only have 3 ingredients…

2 bananas
2 eggs
1/2 cup of Kodiak Cakes Power Cakes Flapjack and waffle Dark chocolate mix

In a bowl, smash up 2 bananas with a fork…I guess you could use a mixer, but I like the muffins with some chunks of banana.

Next add 2 eggs and mix well with the fork.

Add the 1/2 cup of dark chocolate mix. (There is a Peanut Butter flavored mix, but I haven’t tried it yet.)
Mix well with a spoon or spatula, scraping the sides of your bowl. You’ll see little mini chocolate chips in the mix. Yummy!

Spray your muffin cups or tins with Pam or something equivalent…and spoon your batter into six of them evenly.

Bake the muffins for 25 minutes…at 350 degrees.

Let them cool for a few minutes, then take a knife and go around the edges with a knife, releasing them…

I couldn’t wait very long, so I broke one open…and devoured it…

They are perfect when you have a sweet tooth, but aren’t too sweet. They have 88 calories and are only 1 point per muffin on Weight Watchers! You can have 2 muffins and 1/2 cup of Almond milk for a nice 3 point snack!!

    Those muffins look and sound delicious, Jeanne! I like that it makes a small batch–perfect when there’s only one or two of you!! I’m not sure if we have that kind of mix in stores in the Seattle area, though–I will have to watch for it next time I’m shopping.

    For those who asked or were wondering, we were able to get in to actually SEE Ron’s doctor Monday, and he did some blood tests. Several possibilities were suggested, and today we got a call from the nurse, saying that Ron’s phenytoin level was very high and could very likely be the cause of his episodes of sudden weakness. He takes phenytoin because he has a form of epilepsy called temporal lobe partial seizures, which cause periods of intense confusion and forgetfulness. Up to now, the phenytoin level has stayed within normal ranges (and of course it controls the partial seizures), so this is a new wrinkle for us. He was to not take tonight’s or tomorrow morning’s doses, and they had put a call in to Ron’s neurologist, so we should be learning more within the next 24 hours.

    I’m so thankful that this seems to be all it was, as it’s a fairly easy fix, just reducing the amount he takes and being tested from time to time. Thanks for asking, and for your prayers.

      So glad to hear your husband doesn’t have anything serious. I saw your comment the other day and was going to write to you and then I probably got interrupted and didn’t get back to it. I’m sorry about that, but know that I was thinking of you. I hope the prescription adjustment solves the issues.
      One of my best friends in grade school had epilepsy. She was on medication, but we all knew what to do to help and then to get a teacher. if she had ever had a seizure.

  2. Yum, Jeanne! No, I haven’t tried this recipe, but it sure looks and sound good! I love that it is only 3 ingredients, and so simple, and the fact that the muffins are a separate piece, so you can count calories. Great idea that I will try, if I can find that chocolate mix. Truth be told, things are not as plentiful at the grocery store as they once were and the flour section is always lacking nowadays, but I will try to find that.

    I have been making banana bread weekly, it seems, and I had been mashing the bananas with a fork, but it took forever, since I had to do 3 bananas for the bread. I thought to use a pastry cutter, and it worked like a dream, and so much easier and faster.

    If you don’t eat the muffins or the bread right away, you can always reheat them in the microwave for a few seconds, and they taste just like they came right out of the oven!
    It’s kind of cool here, so this is really a treat! Thank you so much for the “new” recipe to try!

    1. Hi Linda, Yep, a pastry cutter is one of go to kitchen tools… great for mashing things like beans for burritos, mash bananas, and semi- rice potatoes for twice baked ones. I like them to have little chunks left before I put them back in the shells.

  4. Had to do a quick check and it appears that Target and Safeway have Kodiak Cakes, but whether they are in stock, don’t know. Pretty lean pickings on many items around here. I know other person would love these and probably the peanut butter flavor too. I’ll have to check Target next time we venture out. Thanks for the recipe. 🙂
    My sew along project is taking forever as usual. Finished the tiny pockets, but still have to attach them. Then I can sew on the ruffle and reversible side. Can’t wait to start on the matching shorts, but all of this must wait while I water early. Looks like it is going to be pretty warm today.

  5. I’ve been baking brownies. I substitute unsweetened applesauce for the butter and they are yummy. The texture is a bit different from ones with fat but not in anyway that matters to me.

    After a couple of cold rainy days we are back to sunshine and possible bike rides. Yippee.

    Have I mentioned that I’m doing tie dye experiments? I did a white hoodie and I love how it turned out. Now I’m doing vintage linen napkins. They will be used to make some pillow covers for my couch. My couch is a dark green and this should punch things up!

  6. That recipe looks good. I don’t know if Kroger sells that mix or not as I’ve never heard of it before. I guess we are all looking at things that can be substituted for others. Last time I went to the store they had my brand of eggs and so I bought a few dozen and spent time freezing them two to a baggie. They keep for a year that way. I’m used to doing things like that though. My grandparents would buy fruit or vegetables in bulk when they were in season and then can or freeze part of them. They always had a garden also. It’s actually easier to chop a whole bunch of anions at once for example and freeze them in portions.

  7. These muffins look so yummy. I really must make them. My daughter-in-law does grocery shopping for others at HEB. I’m going to check with her and see if they have this mix. I have never seen it anywhere.

    Even in our rural area it seems our grocery stores (Wal-Mart and a small local) are having trouble keeping up with things. Wal-Mart never has toilet paper these days. Our locally owned store does but it’s sparse. The other day I accidentally bought 1-ply toilet paper. It’s supposed to last a month. Don’t think so. I finally found tomato soup. Couldn’t find that for awhile. I haven’t needed any baking items for awhile so not sure about that. Still doing okay with eggs though but was wishing for awhile my son was still home and raising chickens. We had years of fresh eggs. Now they’re talking about meat shortages and asking people not to overbuy. Good luck with that. I’m willing to take my chances and arrange my meals around what’s available, but sadly others are not. We’ll see what happens.

    At the grandkids house today. The guys sometimes help unload kitchen cabinets for this one company. It pays pretty good for part of a day’s work. It seemed easier to just come here than make four trips like I usually do. Barbers and hair salons, etc., are opening here starting Friday. You said you cut your hubby’s hair. My daughter-in-law cuts my son’s and grandson’s also so they were good to go lately. But David’s been going to the same barber since we moved to Sealy 30 years ago and doesn’t want to change. So he’s over the moon. I’ll be checking in with my hair salon to see exactly if and when they’ll be open. Really need a trim.

    I’ve never notice Kodiak packages. Can’t wait to try them!

  9. I bought the Kodiak Dark Chocolate mix awhile back on Amazon, to use in some Weight Watchers recipe I wanted to try. Then a couple of weeks later, I saw it on the shelf at Wal-Mart. I’d never noticed it before, but there it was! So since I have all three of those ingredients, I may have to try those muffins!
