Hi everyone!

I’m going to put a reminder in here about James’ outfit, that ends Sunday evening. I’m concerned, I’ll get busy with company and forget to remind you if I don’t do it now… You can see the outfit on Ebay by clicking the picture at the right side bar or you can click HERE.

I have had a very busy day… because Rebecca texted me and said they were coming TODAY! Yep, it’s already Friday and I’m still up… just got their room all fixed for them. We give them our bedroom because it has a master bathroom and it’s just easier for company that way.

Yesterday afternoon we had a small memorial at the cemetery for the anniversary of our Pastor’s wife, who passed away a year ago. It was at 3:00, so after it was over, I had to get on the stick and get as much done as I could. It will take Karn and Rebecca about 9 or 10 hours to get here, so they’ll be here in the early afternoon.

It’s now 12:39 and I’m going to share my favorite cookie bark recipe with you. If you’ve already made it, you know how good it is, and if not, you should try it… it’s really good. I’m planning on making some this year. My mailman and the ladies at the Post Office love it too. We always give some to the trash guy and the UPS guy.

So here’s the recipe… complete with pictures! *wink* *wink* I copied a previous post, so you can just see everything below…

Chocolate Mint Cookie Bark… a favorite Christmas recipe December 3, 2014

There are no dolls in this post…no sewing and no fabric…but I did use a pair of scissors to open my chocolate chips… Does that count?

It’s getting to be that time of year when things get hectic and it’s no different at my house. I have a big party I’m planning for the Married Couple’s from my church and I’ve been busy with all kinds of things for it. We’re having it in a banquet room at a local restaurant so we don’t have to cook, but I have to get this place looking festive for Christmas. I have most of the things done, but I always like to make some homemade goodies for their treat bags. That’s what I’ve been doing today… making cookies (6 dozen so far) and this recipe I’m sharing with you today… Chocolate Mint Cookie Bark… I hope you’ll try it. It’s SO good and it only calls for 4 ingredients…

8 oz of semi sweet chocolate chips
6 oz of white chocolate chips (Nestle’s Premier White is what I used)
2 TBSP peanut butter
10 Oreo cookies (I used the mint ones)

Now, don’t laugh at my pictures. My lighting was from my stove light and it’s a bit yellowish. I was working quickly so my pictures aren’t like ones I’d submit to “Taste of Home”… they are just “regular” pictures, done quickly as I worked.

You have to work fast when you make this so it’s best to have it all measured out ahead of time.

Place 5 Oreo cookies in 2 separate baggies and crush up into small pieces… I just used a heavy spoon to smash them up. They do get sort of gooey inside the baggie.

I take them out of the baggies and put them in 2 separate bowls so it’s quicker to add them to the melted chocolate chips…

Have your 2 TBSP of peanut butter ready… (It’s NOT 1/3 cup PB…I just have it sitting in a measuring spoon…)

Have a piece of wax paper about 18″ long spread on your counter.

Place the two different flavored chocolate chips in 2 separate glass bowls. Starting with the semi-sweet chocolate chips, microwave them in 30-40 second increments, stirring with a spoon, until the chips are melted. I usually have to do it 3 or 4 times to get them all melted.

Here are the semi-sweet chocolate chips as they are almost melted…

Quickly add the crushed Oreo’s to the semi sweet chocolate chips and stir… then spoon the chocolate mixture onto the wax paper
skipping spaces like you would if you were making a checkerboard.

(I’ve made this enough times that I go ahead and put the white chips in the microwave as I’m putting the blobs of semi-sweet chips on the wax paper.) Then take the white chocolate chips bowl and place it in the microwave in 30 second increments until they are melted. Next add the Peanut butter to it, stirring quickly. It sort of turns a bit yellowish.

Then add the crushed Oreo’s to it and quickly spoon it out onto the wax paper in between the chocolate blobs…

Next take a butter knife and drag it from top to bottom then back up and then back down down and then up and then back down…pulling in different directions…
That’s what gives it that marbled look….

Slide a flat cookie sheet or a stiff cutting board under the wax paper and place it in the frig until it hardens. Then just break it apart. I managed to make 3 batches of this bark in about 45 minutes.

YUMMY!! Now if I can just keep my hubby out of it! (I just caught him coming out of the kitchen with a smile on his face, so anybody want to guess what that means???)

    I remember seeing this recipe once before on your blog, I think, but haven’t made it…yet. And to tell the truth, I haven’t felt much like cooking anything lately. This bug I have has turned into a head cold, it seems. The pills for coughing that they gave me at urgent care yesterday have really helped, but I’m still running a low-grade temp, and am about to fall into bed as I write this. At the moment, I’m not planning on playing piano for church Sunday; Laurie, the organist, messaged me this morning and told me not to worry about music; she will take care of it. I’m glad, because I sure haven’t felt like practicing, either, and with Christmas hymns, practicing is always a good idea!!

    Oh, I have made the Chocolate Cookie Bark, and love it! I even had my two granddaughters over several years ago and we made it together! It is wonderful scattered in a plate of cookies, but needs to be refrigerated after making it for awhile.
    I always give our pastor some, a few neighbors too, and of course, save some for us!

    After reading your post, Jeanne, you mentioned a dinner for married couples from your church. Surely that is from several years back when you introduced the recipe to us! Have a great time with Rebecca and Karn this weekend! Maybe they will help with getting your tree up, if it isn’t already. I have one up and decorated, and have another one to go, cards to address, and packages to wrap. We seem to have cut way down on running around so much during the holidays, and believe me, it is so much nicer and peaceful!

    That’s great that Beca and Karn are arriving early. Long drive though. Too bad they can’t fly down. Would definitely be faster.
    Maybe they can help with the tree? That would be one thing to check off of your list.
    Here, we’re having frost for the next few days. Hope my tender plants survive.
    Maybe there will be time to visit a few antique shops or fun stores while everyone is home at Jeanne’s. Especially nice at this time of year when the shops are all decorated for the holidays.
    I’m sure everyone is very busy running errands etc.

    Dear Jeanne, I am so happy that the young folks are coming for a visit. It will be so wonderful to spend time with them.

  6. Have a great time with Rebecca and Karn, Jeanne. Yes, maybe they can help put up the tree. I have the smaller tree up that normally goes into the sunroom and the two small porch trees and wreaths up outside. That might end up doing it for the year so more time to just relax and enjoy the season. In the past we put up a bigger tree in the family room, the aforementioned smaller tree went in the sunroom, and I did a small one in my bedroom. Of course, my daughter also had a small one in her bedroom that she decorated herself.
